Fortunately, there is a place amid all this culinary splendor where you can go straight from the beach for steamers, fish-and-chips and homemade pies. LOBSTER ROLL (affectionately known as Lunch, thanks to the large sign outside) is on the highway between Amagansett and Montauk. A Hamptons institution, it started as a shack decades ago and remains the best place for no frills seafood. The tartar sauce is tangy, the coleslaw fresh, the seafood salads are the chunkiest around, the platters-fried clams, puffers, flounder, plentifull and reasonably priced. It's strictly paper placemats, and regulars would revolt if it ever changed. If you haven't done Lunch, you haven't truly done the Hamptons. It's even more essential than spotting a celeb.

Beside having the best rolls in town, the Lobster Roll also serves some of the best fish and chips around. Don't fill up on the seafood, though; Andrea, the owner, makes all the desserts. When we stopped by she was in the middle of making a strawberry rhubarb pie—talk about heaven!

This no-frills spot consistently generates as much buzz as the area's toniest restaurants. For almost 40 years it has been serving top-notch fish and chips, chowder, and of course lobster rolls, inspiring legions of adoring fans (including many Hamptons celebs) and even a backlash against the "hype". Not bad for a lowly clam shack. But it lives up to the attention. The chowder is stellar: creamy and rich, with tender potatos meaty clams, and a hint of herbs. The lobster roll itself is a simple classic. An obscene amount of lobster meat, held together with a bare hint of mayonnaise and crunchy chunks of celery, is loaded into a butter toasted bun. It's served á al carte, so order some of the crinkle-cut, perfectly crisped French fries or get messy with corn on the cob.

With this kind of food, an ice-cold beer is the perfect accompaniment. Deep-fried puffer fish, a special when it is in season, are a must if available. Encased in a light, tempura-type batter, the flaky nuggets of fish are perfect with just a squeeze of lemon or dipped into tartar sauce and popped into your mouth. Also not to be missed are owner Andrea Terry's pies, including a luscious strawberry-rhubarb with an unmistakably homemade, flaky crust, served with vanilla ice cream.

The surroundings are as low-key as the menu. A screened-in porch offers a nice view of the setting sun. The warm, friendly host welcomes you with a big grin that makes you feel right at home. But professionalism lies under the surface of the family atmosphere—headsets help the staff choreograph their impeccably timed ballet to keep the food flowing from the kitchen, and this always-busy establishment runs like a well-oiled machine.

A new lobster salad slider, is a scaled-down version that comes on a miniature hot dog roll. Bottom line, good and simple.

The Lobster Roll, aka "LUNCH", is still far and away the best of the "beach" restaurants that dot the strip of Montauk Highway between Amagansett and downtown Montauk. It bustles and hustles and you'll feel most comfortable with a t-shirt and shorts on and a few kids in tow.

Also know as "Lunch", this landmark owned by the Terry family since opening in 1965 is, for many, a required stop en route to Montauk. People stop by for the namesake sandwich — fresh lobster salad piled on a hot dog roll — and for "puffers" (fried blowfish), another specialty. Justly renowned for its world-famous lobster roll, this widely popular seafood stop offers lots more.

Lobster Roll • "Scrumptious pies remind you of Long Island's farmland heritage, with thick lumpy fillings of seasonal fruit."

The lobster roll is the defining dish of the Northeast seafood and the best one on the East End is at fittingly, the Lobster Roll in Napeague. Yes, I know, the place is the most immitigable tourist trap out here and saying its the best torturously cliché but it is, sorry. Everyone tried to fancy-up the lobster roll with brioche buns and lemon aioli, but none of them can compare to three simple ingredients: lobster, mayonnaise, hot dog bun. Two solutions for you crabby locals, one, it's fall, the tourists are gone, two, call head, get the roll to go and eat it when you get to the beach.

The Montauk Pioneer

The Lobster Roll is decorated with a throwback to the 60s, with music from that era playing in the restaurant. The place gives you a feeling of old-fashioned Americana, and you feel like you are in a Norman Rockwell as an oldie sings throughout and smiles from all the employees greet you as if they have known you for years. It really is just this all-round great place.

Eat Your Way Across The USA, Jane and Michael Stern

The Lobster Roll is one of the essential seafood shacks in the Hamptons. It has been here forever, operated by a family that settled on Long Island in the seventeenth century, and the menu is traditional family-fun vacation food. Chowder, steamers, plump lobster rolls, and fried puffers are the staples but it's dessert that is great, pie in particular. It is glorious pie, pie that reminds you of Long Island's farmland heritage, with a fine flaky crust and bounteous filling. Midsummer, when the sky is blue and the waves lap against nearby sands, what could be better than a lunch of chowder and lobster followed by a slab of fresh strawberry-rhubarb or raspberry pie?
