Lobster Hummus

 

Ingredients:

3 cloves garlic
1/2 teaspoon dry parsley
1/4 cup plain low-fat yogurt
juice of 1/2 lemon
1 teaspoon olive oil
1/2 teaspoon salt
1/2 teaspoon paprika
dash white pepper
1 can garbabzo beans (19oz) - drained
6 oz, lobster meat - drained

Directions:

In food processor, mince garlic and add other ingredients except lobster until smooth. Chop lobster fine with french knife. Blend lobster with remainder.


Serve with garlic toasts or crisp crackers.

Best wine: Sauvignon Blanc or Vigonier
